Mexican Fire Rice

Ingredients:
2 1/2 cup cold water
1 1/2 cups long grain white rice
16 ounce ground spicy sausage
2 cups hot sauce
1 cup sour cream
1/4 cup of sliced jalapenos
1 teaspoon cayenne pepper
1 cup shredded cheddar cheese
1/4 cup green onions chopped
Dash of salt and pepper for taste
Directions:
In a large saucepan boil the water and then stir the rice. Reduce the heat, cover the saucepan
and simmer on low heat for 15-20 minutes until water is absorbed and rice is fluffy.
Preheat your oven to 350 degrees.
In a medium size baking dish mix the cooked rice, spicy sausage, hot sauce and sour cream mix together.
Top this wonderful dish with shredded cheddar cheese, fresh ripe jalapenos, and put it in the oven for 20 minutes
or until cheese is melted.
Serve with warm tortillas or nice baked corn bread.
