Swiss Mocha Roma with Whipped Cream

1 Tbsp. Roma (coffee substitute)
1/2 cup water
3/4 cup carob Rice Dream (liquid/boxed)
1 Tbsp. carob powder
2 Tbsp. sweetener of choice (honey, stevia, etc.)

DIRECTIONS:

Combine all the ingredients in blender and whiz until smooth and creamy
(about
30 seconds). Pour into a glass measuring cup and microwave for 2 minutes.
Pour
back into the blender and add:

2 - 3 Tbsp. tofu whipped cream (recipe follows)
Serve immediately.
Yield: 1 1/2 cups


Tofu Whipped Cream

1 cup silken tofu, lite
1 Tbsp. plus 1 1/2 tsp. oil
2 tsp. water
2 Tbsp. sweetener of choice (honey, stevia, maple syrup)
1/2 tsp. lemon juice
1/8 tsp. salt
1 1/2 tsp. vanilla

DIRECTIONS:

Blend all ingredients until smooth. Refrigerate for two hours to enhance the
flavor. Keeps well in refrigerator for 5 - 6 days.

***If you are using this in for the Swiss Mocha Roma beverage you do not
need to
refrigerate for two hours before using.
