Pitta Bread

2 1/4 c. warm water
1 package yeast
1 tsp. oregano
1 Tbsp. blackstrap molasses
2 Tbsp. olive oil
2 Tbsp. whole wheat flour
2 tsp. sea salt
4 c. whole wheat pastry flour

DIRECTIONS:

1. Mix the warm water with the yeast, 2 tablespoons flour, molasses, olive oil
and oregano in a medium-sized bowl. Cover with plastic wrap and let sit for 8 -
10 minutes.

2. Remove the plastic and add the remaining ingredients. Mix well and knead
into a dough for five minutes.

3. Let dough rest for 15 - 20 minutes.

4. Cut dough into small pieces and roll each piece into a 6-inch circle. Place
on a dry skillet, punch holes into it with a fork, and cook until golden brown.
