Tofu and Spinach Soup

Ingredients:

1 8-oz. package fresh spinach
1 container firm Mori-Nu tofu
2 Tbsp. peanut oil
1/2 tsp. sea salt
2 1/2 c. water
2 Tbsp. light soy sauce
1 tsp. toasted sesame oil

Directions:

1. Wash the spinach well, discarding the tough and discolored leaves. Shake
off the excess water and cut the leaves into small pieces.

2. Cut the tofu into about sixteen cubes.

3. In a wok, heat the peanut oil until hot. Stir-fry the spinach until soft.

Add salt and water and bring to a boil.

4. Add the tofu cubes and soy sauce and cook for 2 minutes. Add the sesame
oil just before serving.
