These waffles are really a treat and kids love them too!
Ingredients:
2 1/4 cups cold water
1/2 cup raw cashews
2-4 pitted dates
2 cups rolled oats
vanilla to taste
1/2 tsp salt
1/2 cup coconut
Directions:
1. Place 1 cup water in blender and process cashews and dates until smooth.
2. Add remaining ingredients and 1 more cup of water and blend well. Pour batter onto waffle iron and fill
completely, covering all the grid and edges.
3. Bake until steaming stops about7-8 minutes. Blend batter again and add remaining ¼ cup of water before
baking the second waffle.
Note: Freezes well and you can double the batch and save some for a super, quick and yummy breakfast.
